INGREDIENTS
• 1 lb. Baby potatoes
• Olive oil
• Truffle oil
• 1/4c. Sour cream
• Chives

DIRECTIONS
Preheat oven to 450.
Slice a small piece off the bottom of the potatoes so that they sit flat. Mix with olive oil and S&P and roast for 30 minutes. In a zip lock bag, add a 1/4c sour cream and cut the tip of the bag to squeeze a dollop of sour cream onto the top of the potato. Cut chives and add to the top to garnish. Drizzle truffle oil over potatoes and enjoy!
