Salmon w/ Brussels + Potatoes

SALMON

Preheat oven to 350º

In cast iron skillet, heat oil on medium high (I used coconut oil but avocado oil would work great too)

Sear the filets for 2 minutes, add s&p, and flip over. Put the cast iron pan directly in the oven for 5 additional minutes

BRUSSELS + POTATOES

Preheat oven to 400º

Spray avocado oil on a sheet pan. Add washed baby potatoes and trimmed Brussels Sprouts (cut in half). Sprinkle with s&p and spray again with avocado oil on top. Bake for 15 minutes. 

AIOLI 

1/3 c Mayo 

Half of a shallot, chopped finely 

Lemon juice and zest from 1/2 lemon

S&P 

Whisk until smooth
